Berry-Muffins

I finally wanted to try baking Blueberry-Muffins, but I had frozen berries which was a mix of blueberries, strawberries and raspberries. I mixed up different flour types and sugar types, as I had them open and wanted to use them up –  made this recipe even with two types of non-dairy milk (I added the exact amounts in brackets) . 


They came out so yummy, moist, fruity, but  not too sweet.


Ingredients:

  • 300g flour (240g spelled flour, 60g white flour)
  • 150g sugar (90g whole cane sugar, 60g white sugar)
  • 1 sachet of baking powder
  • 1 sachet of vanilla sugar
  • A pinch of salt
  • 1,5 dl of rapeseed oil
  • 2 dl of non-dairy milk (1,5 coconut-drink, 0,6 soy-drink)
  • 150 g of mixed berries (I mixed fresh and frozen berries)

Preparation:

  • Mix dry ingredients, then add liquid ones
  • Add the berries at the end
  • Put the dough into your muffin tins
  • Bake for approx. 20 min at 160° celsius,  then additional 5-7 mins at 180°


Optional: sprinkle some icing sugar over it!
