Cashew "cream-cheese"

Omg, i could not believe the taste when I made this recipe for the first time. I did not have any cheese for months, it was a few months after I went vegan when i detected this delicious spread. 

We use it on fresh bread for sandwiches, or as a dip, or for wraps and burgers...



Ingredients (for 2 small cans)

  • 200-250 g Cashew-nuts (soak in water over night)
  • 3 tbs of plane yogurt of your choice (my favorite is the plane one from Luve)
  • 1 bunch of chives

  • juice of 1/2 lemon

  • 3 tbs of nutritional yeast

  • 1 clove of garlic 

  • some salt, pepper and herbs of your choice

 


Preparation


  • Cut your chives into small pieces, put 2/3 aside
  • mix all the ingredients until smooth - by adding only 1/3 of the chives (otherwise your cream cheese will turn green...)
  • add the dip to a bowl, and now add the remaining chives and some additional salt if necessary


Add the bowl to the fridge over night - as the taste will be even more amazing the next day!
