Pasta with Cashew sauce
If you fancy a creamy "cheese" sauce, this one is for you. Based on cashew nuts and can be prepared within a few minutes, delicious with pasta.
Ingredients:
- 200-250 g cashew nuts (soaked overnight, or simmer in water for about 15 minutes) - keep some water for later
- 1-2 dl plant drink (oat or soy)
- juice of 1/2 lemon
- 1 clove garlic
- 4-5 tablespoons of nutritional yeast
- ½ tsp starch (Maizena)
- some salt, pepper and nutmeg
- Optional: 1 onion / cress
Preparation:
- Drain cashews and add all other ingredients to your blender
- Mix well for about 2-3 minutes till creamy consistency
- Put cream in a frying pan, if you want you can sauté onions beforehand.
- Simmer everything on low heat and stir with a whisk. If the sauce becomes too thick, add some of the cashew water you kept aside
- Try it, season with salt / pepper / nutmeg and stir in cooked pasta
Serve, garnish with yeast flakes and / or some cress or other herbs of your choice & enjoy!
