Veggie-Casserole / Gratin

 

You should eat more veggies, but are craving some soul food? Then this vegan casserole could be the right thing! In any case, use potatoes, and whatever veggies you have left! I used blue potatoes for this recipe 😊 The casserole can be served as a side or as main course.


Ingredients (for 1 baking dish):

  • 8-10 potatoes, sliced (I used blue potatoes)
  • 1 cauliflower, cut into pieces
  • 1 zucchini, sliced
  • 2 ProVamel Cuisine soy or any other vegan cream (4-5 dl)
  • 200 g vegan grated cheese (should be melting well)
  • Garlic powder
  • Salt & pepper
  • Nutmeg


Preparation:

  • Arrange the vegetables in your baking dish
  • Mix all other ingredients in a bowl, then pour over the veggies
  • Bake at 190 ° for 40 minutes
