Mini "Cheese-Quiches" - "Chäs-Chüechli"

Here comes a Swiss classic one. One of my fears I had, when I went vegan: can I never eat "Chäs-chüechli" again? The answer is: sure! But vegan ones. You can easily make them yourself, and serve them as finger-food, or for dinner with a nice salad! Bring in some Swissness to your plate!


Ingredients (for 8-10 small quiches)

  • 1 muffin tin
  • 1  puff pastry, rectangular
  • 1 pack (2 units) Vegusto No-Moo sauce 

  • 125 g silken tofu
  • 150 - 200 g vegan grated cheese (which melts well)
  • 3 tbsp nutritional yeast
  • Paprika powder
  • Salt pepper
  • Nutmeg 


Preparation

  • Grease the muffin tin with a little oil
  • Cut the puff pastry into 8-10 squares and press gently into the forms
  • Prick the edges with a fork
  • Mix all other ingredients in a bowl, then place in the puff pastry molds
  • Bake at 180 ° for 25 minutes


Now let them cool down, carefully lift them out of the tin and immediately eat one right away – as you always need to taste food before serving to others, right?
