Pulled Jack
Omnivores call it pulled pork... The healthy alternative is a fruit, the jackfruit. The best one is the organic version that you get in organic food stores in cans. Pulled jack can be used to fill burgers, sandwiches or wraps.
Ingredients (for 2 servings)
- 1 can of pulled jackfruit (in brine)
- 1 onion
- 1 tbsp ketchup (or tomato paste)
- 1 tbsp apple cider vinegar
- 1-2 tablespoons of BBQ sauce
- 2dl vegetable broth
- some garlic powder
- 2-3 drops of smoked liquid
- Salt & pepper
- Optional: smoked paprika powder
Preparation:
- Drain the jackfruit and cut into smaller pieces
- Fry the onion in a pan with a bit of oil
- Add and fry the jackfruit pieces
- Add your spices - then insert broth and let it simmer for 20-30 min. with the lid on
- When the jackfruit is soft, crush it with a potato masher and put everything in a baking pan. You can now add a bit of BBQ sauce and / or smoked paprika powder
- Put it in the oven at 180 ° celcius for approx. 30 min.
And now add it to your sandwich, your burger or wrap. As you like, add some salad, arugula, tomato slices, pickles, onions!
