Scrambled Tofu

There are days you want something hearty for breakfast. Here is one idea and you need max. 10 mins to prepare it. Secret ingredient: Tofu and Kala namak salt...


Ingredients (for 2 servings)

  • 250g organic firm tofu
  • 100 - 200g silken tofu
  • 6-8 cherry tomatoes
  • 1 spring onion
  • 1 pinch of salt
  • 1 pinch of turmeric
  • Some pepper
  • 1 pinch of Kala Namak salt
  • Some rapeseed oil to fry
  • Optional: some vegan cheese or nutritional yeast

Preparation

  • Chop your spring onion and cherry tomatoes
  • Add rapeseed oil to the pan and add the spring onions
  • Now crumble the tofu block with your fingers and fry in the pan
  • Then add the sliced cherry tomatoes - simmer for about 5 minutes
  • Add silken tofu
  • Then color it with turmeric and add the other spices
  • Put your Kala Namak at the very end and very little at the beginning, as the taste is quite intense
  • Taste and add more spices as you like, you can now add some vegan cheese and let it melt before serving, or add a few spoons of nutritional yeast if you like the “cheesy” taste
  • Sprinkle a few pieces of spring onions or chives over it – and enjoy your breakfast!
