Scrambled Tofu
There are days you want something hearty for breakfast. Here is one idea and you need max. 10 mins to prepare it. Secret ingredient: Tofu and Kala namak salt...
Ingredients (for 2 servings)
- 250g organic firm tofu
- 100 - 200g silken tofu
- 6-8 cherry tomatoes
- 1 spring onion
- 1 pinch of salt
- 1 pinch of turmeric
- Some pepper
- 1 pinch of Kala Namak salt
- Some rapeseed oil to fry
- Optional: some vegan cheese or nutritional yeast
Preparation
- Chop your spring onion and cherry tomatoes
- Add rapeseed oil to the pan and add the spring onions
- Now crumble the tofu block with your fingers and fry in the pan
- Then add the sliced cherry tomatoes - simmer for about 5 minutes
- Add silken tofu
- Then color it with turmeric and add the other spices
- Put your Kala Namak at the very end and very little at the beginning, as the taste is quite intense
- Taste and add more spices as you like, you can now add some vegan cheese and let it melt before serving, or add a few spoons of nutritional yeast if you like the “cheesy” taste
- Sprinkle a few pieces of spring onions or chives over it – and enjoy your breakfast!
