Veggie-Quiche

This quiche is  tasty and easy to prepare.  And the additional advantage, while it is baking in the oven you can do other stuff  for about 40 - 45 minutes :-). And your kitchen will just smell amazing, and make everyone hungry, which is good, as this quiche serves 6-8, depending how hungry you are!




Ingredients (for 6-8 servings - 1 large quiche)

  • 1 vegan puff pastry
  • ½ onion
  • 1/4 tbs coconut oil
  • 1 broccoli head
  • 200 g. additional colorful veggies (peppers, peas, tomatoes or vegetables of your choice, I took some frozen veggies)
  • 250 g silken tofu
  • Curry powder and some curry-paste (yellow / red - depending on taste)
  • 1-2 tbs Soy sauce
  • Garlic powder
  • 3 tbs of Simply-V melting cheese or other vegan cheese of your choice


Preparation:

  • Cut your broccoli-head into pieces (ideally 40 mins before you start to cook them up)
  • Cut the onion into small pieces and heat in coconut oil
  • Add Curry paste, curry powder and garlic powder
  • Cut the other veggies into small pieces and put them in the pan, then deglaze with a bit of soy sauce after a few minutes
  • Cover the pan and let it simmer for about 5 mins, then add the broccoli and simmer for add. 10 mins.
  • Preheat the oven to 190 ° degrees (fan oven)
  • Roll out the puff pastry into a baking sheet and prick it with a fork
  • Pour your veggies on the puff pastry
  • Mix the silken tofu in a bowl with Simply V cheese
  • Cover up your quiche now with the silken-tofu- mixture with a spoon
  • Let the quiche bake at 190 ° (fan oven) for 40 to  45 min.


Serve with Salad and enjoy – can be stored in the fridge and tastes yummy as well the next day!
