White Chocolate Lemon Muffins

Here is a more «healthier » version of Muffins, but we cannot miss the chocolate!  The recipe does not have much white sugar in it, so you can add a bit of white chocolate instead 😊 they look cute with deco-flowers on top. Or any deco of your choice ! The lemon taste acts as a surprise here and keeps them moist for a few days – in case they will survive that long ! 😉


Ingredients (for 12 muffins)

  • 300g semi-white flour
  • 50g coconut blossom sugar
  • 20 g white sugar
  • 2 tsp of baking powder
  • 1 tsp baking soda (Natron)
  • 1 sachet of vanilla sugar
  • 2 tbsp starch
  • Juice of 2 lemons
  • Zest of 1 organic lemon
  • 2 dl water
  • 1 dl soy milk
  • 0.8 dl rapeseed oil
  • 1 pinch of salt
  • 1 vanilla pod
  • 100 g chopped white vegan chocolate


Decoration

  • 100 g white vegan chocolate (to melt)
  • Any nuts of your choice, other sprinkles of your choice (e.g. edible flowers)


Preparation

  • Mix dry ingredients including the chocolate, except for the sugar
  • Mix Sugar with the liquid ingredients and add it to the bowl
    (add some more soy-milk if you need - just until you get a dough)
  • Fill the dough to the muffin baking cups
  • Bake for 18 min at 180 ° degrees
  • Let them cool down, add some chocolate coating and decorate as you like
  • Place muffins with chocolate coating in the fridge for at least 1 hour
