White Chocolate Lemon Muffins
Here is a more «healthier » version of Muffins, but we cannot miss the chocolate! The recipe does not have much white sugar in it, so you can add a bit of white chocolate instead 😊 they look cute with deco-flowers on top. Or any deco of your choice ! The lemon taste acts as a surprise here and keeps them moist for a few days – in case they will survive that long ! 😉
Ingredients (for 12 muffins)
- 300g semi-white flour
- 50g coconut blossom sugar
- 20 g white sugar
- 2 tsp of baking powder
- 1 tsp baking soda (Natron)
- 1 sachet of vanilla sugar
- 2 tbsp starch
- Juice of 2 lemons
- Zest of 1 organic lemon
- 2 dl water
- 1 dl soy milk
- 0.8 dl rapeseed oil
- 1 pinch of salt
- 1 vanilla pod
- 100 g chopped white vegan chocolate
Decoration
- 100 g white vegan chocolate (to melt)
- Any nuts of your choice, other sprinkles of your choice (e.g. edible flowers)
Preparation
- Mix dry ingredients including the chocolate, except for the sugar
- Mix Sugar with the liquid ingredients and add it to the bowl
(add some more soy-milk if you need - just until you get a dough) - Fill the dough to the muffin baking cups
- Bake for 18 min at 180 ° degrees
- Let them cool down, add some chocolate coating and decorate as you like
- Place muffins with chocolate coating in the fridge for at least 1 hour
